Sweet Potatoes are packed with nutrients so let's make a soup with them! #sweetpotato
This recipe is quick and will be a nice addition to your Thanksgiving meal or a simple winter dish for any day! A Greek or an Italian salad is always a perfect complimentary dish to have with any soup.
This recipe makes about 6 servings.
Ingredients
4 cups of veggie or chicken broth
1+ tablespoon Olive Oil (the more the merrier)
1 garlic clove, minced
1 small leek, sliced
3 medium sweet potatoes, peeled & cut into 3/4th inch shapes
1/2 teasppon drid thyme
3 ounces spinach, coursely chopped (optional... and will add some green to it)
add salt and pepper to your liking
The Plan
Start food prepping...
Chop the veggies separately in the chopper or with a knife.
Set the veggies aside in a bowl.
Measure out the seasonings and optional salt/pepper and set aside in a bowl.
Start cookin'...
Add the olive oil to your saucepan over medium heat.
Add leek and garlic. Cook until tender.
Add sweet potatoes, broth and thyme to the pan, bringing to a boil.
Reduce heat to med-low. Cook for 10ish minutes or until sweet potatoes are tender.
Add the spinch at the very end to ensure you don't overcook it, for about 2 minutes.
Final Touches...
(2) Options:
Spoon some of the soup into another pot, let it chill and use a food processor
or blender to smooth it out OR enjoy the soup with chunky sweet potatoes.
