I've been eating a lot of salads this Spring and it's fun to switch the green scene up so here you go. It's an old recipe I found. Leafy greens always lift my spirits no matter my state, probably due to the B vitamins they are packed with. Fun fact: B6, B12 and folic acid are involved in the production of brain chemicals that regulate mood. This particular salad also includes walnuts, flaxseeds and avocado, which also boosts mood due to their omega-3's. A daily habit I love is making sure to eat at least one salad per day.
This salad pairs well with Red Lentils. I add raw, chopped kale in addition to a dash of salt+pepper, cumin and cinnamon to the lentils. Red lentils are high in fiber and improve blood sugar control among many other health benefits. Kale is packed with a wide array of vitamins.
Ingredients
5+ strawberries chopped
2 handfuls of arugula
Handful of spinach leaves
Handful of radicchio
2 tablespoons alfalfa sprouts
2 spoonfuls of kalamata olives
Handful of walnuts
Spoonful of sunflower seeds
Spoonful of chia seeds
Spoonful of flaxseeds
Avocado Dressing
1 ripe avocado
2 tablespoons umeboshi vinegar
Freshly squeezed lemon juice
Freshly ground black pepper
